A Mediterranean-style meal does not need to be complicated. This salad starts with canned chickpeas and a few vegetables, so most of the work is opening, rinsing, and chopping. Serve it as a side or build a lunch around it.

IN THE KITCHEN

Lemon chickpea salad

Makes: 2 servings · Time: about 15 minutes

What you need

  • 1 can (15 ounces) no-salt-added chickpeas, drained and rinsed
  • 1 cup chopped cucumber
  • 1 cup chopped tomatoes
  • 2 tablespoons chopped parsley
  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon lemon juice
  • Black pepper to taste

Make it

  1. Put the rinsed chickpeas, cucumber, tomatoes, and parsley in a bowl.
  2. Mix the olive oil, lemon juice, and pepper in a cup.
  3. Pour over the salad and stir gently. Serve promptly or refrigerate.

What the research can—and cannot—tell us

Mediterranean-style eating emphasizes a pattern of foods over time. A study of that pattern cannot establish the effect of this particular salad. The useful takeaway is to make varied meals workable in your own kitchen, without treating an ingredient as a cure.

Three ways to adapt it

  • Mash some chickpeas for a softer texture.
  • Add whole-grain bread or another food you enjoy to complete your lunch.
  • Start with a smaller portion of chickpeas if beans are new to your routine.

Keep prepared salad refrigerated and follow standard food-safety guidance for leftovers. If your clinician has prescribed restrictions on particular foods or nutrients, fit the recipe to that plan.

RESEARCH IN PLAIN ENGLISH

What did the study find?

Randomized trial

In older adults at high cardiovascular risk, Mediterranean-style diets with olive oil or nuts performed better on some cognitive measures than the control diet. The trial studied a whole dietary pattern over years, not a single meal. The publication has a linked correction and reanalysis.
